More details about this job opportunity kindly read the description below. The Westbury Hotelnow has an excellent opportunity available for a Sous Chef to join our culinary team. Purpose: Reporting to tthe Executive Chef, you will be part of a team involved in the implementation and develop! ment of a new all day dining concept for The Westbury Hotel. Key Responsibilities: To assist the Executive Head Chef and Executive Sous Chef with the overall running of kitchen areas Contribute to the production of food items in accordance with instructions from the Executive Sous Chef and/or the Executive Head Chef, ensuring the hhighest standard in food concept and presentation.Be knowledgeable of the day's business, i.e. know what reservations are booked in to the F B outlets, be aware of outside events that will impact directly on business, etc.Be familiar with the menu and with any "specials" of the day.Ensure all dishes are prepared in a timely fashion.Ensure all dishes leaving the kitchen/buffet are prepared to the highest standard of presentation.Avoid unnecessary wastage, to observe proper portion planning and control and to act in a cost effective, responsible manner.Ensure excellent food hygiene practice is observed in the entire food chain from storage through t! o preparation and service.To be responsible for training, ensu! ring that the team are fully trained on all skills and standards to the required level.Ensure HACCP compliance within the kitchen and all Food Beverage outlets.Ensure the kitchen equipment is in working order; report any maintenance issues to your supervisor.
